21 DAY FIX CRUSTLESS QUICHE

CRUSTLESS QUICHE

This recipe is from my Clean Eating Group and it is quick, easy, and it goes great with a variety of diet programs. From the 21 Day Fix to Paleo, Clean Eating, or just a regular low calorie diet, it has <300 calories per serving, this recipe is plain AWESOME! 

INGREDIENTS
  • 4 eggs
  • 1 C almond or coconut milk
  • 4 oz spinach
  • handful cherry tomatoes cut up
  • 1/4 c diced onion
  • Coconut oil
  • salt and pepper to taste
DIRECTIONS

Preheat oven to 350. Put about 1 T of coconut oil in a pan. Sautee onions until translucent. Add spinach and tomatoes until spinach is slightly wilted. Whisk together eggs and milk, add salt and pepper. In greased pie plate, put in cooked veggies and add egg mixture. Bake for 45-50 minutes (eggs should start to pull away from the sides and it should no longer be liquidy). Slice into 6 portions.

3 slice is a serving   220 calories  2-red 1-green 1/2-yellow
